This Decadent and Bubbly Cocktail Was Made for Taurus

Welcome to Pouriscope. We tapped Lauren Ash, an astrologer from Sanctuary, to help us pair each sign in the zodiac calendar with a perfectly matched cocktail! Using her guidance, here's the specialty drink we developed for those who fall under the sun sign of Taurus.
No one in the zodiac loves a good party like a Taurus. As astrologer Lauren Ash puts it, “Taurus loves to treat themselves to all of life’s little pleasures, and they never miss an opportunity to bask in the good life.” So, it is only fitting that the second drink in our Pouriscope series is a bubbly, celebratory cocktail that’s tailor-made for the classiest of parties.
This cocktail is subtle and refined, while also being festive and indulgent. Ash says people under the sun sign of Taurus are generally drawn to natural sweetness and have a soft spot for fruit, so this drink pairs bourbon with a distilled spiced pear spirit as its base. It then brings in fresh lemon, rich Demerara sugar and—since Tauruses are the sophisticated socialites of the zodiac—is topped off with a festive splash of prosecco.
The resulting cocktail is a complex interplay between opposing flavors. On one side of the spectrum is the classic deep sweetness of bourbon and Demerara sugar. On the other side is the zesty acidity of lemon juice and the baking spice notes found in the pear liqueur. These different elements are simultaneously lifted and lightened by the addition of sparkling wine for a drink that is at once approachable and complex. It’s an effortlessly sexy cocktail.

Ingredients
- 1 oz.
bourbon
- 3/4 oz.
- 1/2 oz.
fresh lemon juice
- 1/4 oz.
Demerara syrup
- 4 oz.
prosecco (such as Mionetto)
thinly sliced apples, for garnish
Directions
- Step 1Combine all ingredients except the prosecco in a cocktail shaker
- Step 2Add ice and shake until well-chilled, about 20 seconds
- Step 3Double strain into a coupe glass (such as this one), and top with prosecco
- Step 4Garnish with an apple fan
