It may be hard to believe, but one of the best destinations for bubbly is no longer in France. While Champagne from its namesake region has reigned supreme for centuries, a new contender is emerging from the pack: the South of England. Over the past decade, English sparkling wine has created quite the fizzle in the wine industry with its rapidly growing interest and exciting culture.

English sparkling wine is typically made from the same combination of grapes often used in Champagne: chardonnay, pinot noir and pinot meunier. The similarities don't end there, either—the chalky, limestone soil and south-facing slopes of Southeast England echo the Champagne region's terroirs. For better or for worse, the rising temperatures of the region have also contributed to grape production, allowing for the fruit to attain a necessary level of acidity.

The bright acidity of English bubbly along with its recognized notes of apple, lemon and baked goods is what makes it stand out in the sparkling wine category. The surprisingly zippy, food-friendly wine pairs flawlessly with almost any dish from delicate fishes to decadent desserts.
